Oatmeal Fudge Bars

Ready for a quick and simple, but super decadent treat, that is sure to be a crowd pleaser!? These oat fudge bars are just that! They are no bake, vegan and paleo, and pretty low in sugar, as they are only sweetened with dates and little maple syrup! The fudge center is to die for, too. For the oatmeal base:

  • 1 1/3 cups oat flour

  • 1 cup gf oats

  • 1/2 cup chopped nuts (I used walnuts, but optional!)

  • 1/4 cup melted coconut oil

  • 1/4 cup maple syrup

  • 1 1/2 tsp vanilla

  • 1 tsp cinnamon

  • 1/2 tsp sea salt

    For the fudge:

  • 1/2 cup almond milk (or other nut milk)

  • 1/2 cup dates

  • 1/2 tsp sea salt

  • 1/2 tsp vanilla

  • 2 tbsp cacao powder

How to:

  1. Combine all of the filling ingredients in a large bowl, stirring until completely combined. Reserve 1/3 of the mixture in a small bowl and set aside. Press the remaining dough into the bottom of a lined loaf pan.

  2. Combine the almond milk and dates in a small saucepan over medium heat. Let the mixture get hot, without boiling, to allow the dates to soften. After about 5 minutes, remove from heat and add to your blender with the remaining ingredients. Process until completely smooth, scraping down the sides as needed.

  3. Pour the chocolate fudge mixture over top of the base layer. Place in the freezer to set. After the fudge layer has somewhat hardened, sprinkle the remaining oat mixture on top and place back in the freezer to set completely.

  4. Remove from the freezer and cut into bars. Keep in the fridge! Enjoy!
