I am newly obsessed with the cranberry orange combo. These are heavenly and the perfect quick & easy treat!

Ingredients

Crumble
  • 1 cup oats
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 cup monk fruit or coconut sugar
  • Pinch of sea salt
  • 1/4 cup almond butter
  • 2 tbsp applesauce
  • 1/4 cup melted coconut oil or vegan butter
Filling
  • 2 cups fresh cranberries
  • 3-4 tbsp orange juice
  • 2 tbsp orange zest
  • 1 tbsp arrowroot, tapioca, or corn starch
  • 3 tsp maple syrup
  • 1 tbsp monk fruit or coconut sugar

Instructions

  1. Preheat oven to 350F.
  2. Combine the crumble ingredients until crumbly. Press 3/4 of the mixture into the bottom of an 8x8 baking dish.
  3. To make the filling, combine everything in a small saucepan. Bring to a boil and allow to cook for 3-5 minutes until the berries start to break down a bit (I try and mash them with a fork a bit but it's okay to have whole ones!) The mixture should thicken. Remove from heat and pour over the base.
  4. Sprinkle the remaining crumble over the top and slightly press it down.
  5. Bake for 30-35 minutes or until golden. Remove from the oven and allow to cool completely. I keep mine in the fridge! Top with coconut whip or ice cream and enjoy!
