Cashew Butter Chocolate Ganache Tart

So I recently posted a photo on Instagram of one of my favorite tarts I have ever made. This one in particular, was a real crowd pleaser, as I jokingly told the story of how I brought it to a family function, didn’t tell anyone that it was “healthy” or “paleo”, and watched everyone devour it. The same people, mind you, who typically give me the worst time for eating healthy. THAT is when you know you have a winner, folks!

So, i’ll spare you the time and get right to the recipe! Also, just a note, you can feel free to switch out whatever nut butter/chocolate you like! Hope you enjoy this as much as we did!


Ingredients:

Crust:

2 cups almond flour

2 tbsp maple syrup *danishealthyeats gets you a discount!

2 tbsp melted coconut oil

3 tbsp cacao powder

1/4 tsp vanilla

Filling:

1 cup cashew butter *danishealthyeats gets you a discount!

2 1/2 tbsp maple syrup

1/2 tsp sea salt

2 tbsp coconut flour

2 tbsp melted coconut oil

Ganache:

1 Hu Kitchen Raspberry Cashew Butter Chocolate bar

2 tsp coconut oil, melted (or solids from a can of coconut milk)

  1. Mix all crusts ingredients until combined. Press into a prepared pan.

  2. To make the filling, combine all ingredients into a bowl, besides coconut flour. Mix until completely smooth and add the coconut flour 1 tbsp at a time, to allow it to slightly thicken. spread over the crust.

  3. Melt the chocolate bar and coconut oil together until completely smooth. Pour over the cashew butter filling. At this point, I drizzled a little melted cashew butter around the chocolate (Hey, were all a little extra sometimes!)

  4. Place in the fridge to set. Enjoy!
