"Notella" stuffed Chocolate Chip cookies

Chocolate and hazelnut.. one of the best combinations known to mankind. I am not ashamed to admit my direct obsessed (or shall I say addiction) to Nutella growing up. You can put it on literally anything and elevate it x100. However.. once you turn that bottle around and read the nutrition label, you’ll want to slightly cry. Full of processed ingredients and refined sugar. Sure, this can be okay in moderation, but why not swap it for a healthier option so you can enjoy it all the Time!? I think this is where my love for healthy baking came into play!

So as I was saying, I whipped up some home-made, paleo “NO-tella”, but it will definitely have you guessing if its not the real thing! After having the “No-tella” hanging around the house, I had a really genus idea.. I need to stuff some of that amazingness in something.. and why not a cookie. Everyone has to love a warm cookie with a gooey center. So that’s what I did and they turned out to be a hit! They will definitely impress! Have a great weekend guys!

For the paleo Nutella:

2/3 cup hazelnuts

1 cup cacao powder

1/2 cup coconut oil

1/3 cup maple syrup (or stevia)

1/4 tsp sea salt

  1. Im a food processor, blend hazelnuts until butter-like or pasty. Add all other ingredients and blend until smooth. Store in air-tight container.

For the cookies:

1 egg or flax egg

1 cup almond flour

1/4 cup coconut flour

1/2 tsp baking soda

1/2 cup coconut sugar

1/2 tsp sea salt

1 tsp vanilla

1/4 cup ghee (or coconut oil) melted

1 chocolate bar, chopped

  1. Preheat oven to 350F. Beat all wet ingredients together until smooth and fully combined.

  2. Mix in dry ingredients and then fold in chocolate chunks.

  3. Take a small amount of dough and flatten into a flat disc. Place a teaspoon of Nutella in the center and fold dough over until Nutella is completely covered. Place on a cookie sheet, flatten slightly, and repeat.

  4. Bake for around 12 minutes or until edges are golden. I sprinkled mine with sea salt. YUM.
