Heaven On Earth Cookies

I sat for awhile, trying to come up with a name for these cookies. Yes, i could just call them what they are; coconut sugar, date, and cashew cookies, but that just wasn’t going to do them justice.. No. These are so dang good, they needed something a little more.. regal. The only thing I could think of? HEAVEN. They are heaven in cookie form.

The marriage of cashew, date, and coconut sugar just melts in your mouth. Perfectly sweet, a little pinch of saltiness, and tiny chunks of dates offer the most insane flavor. These get a little crispy around the edges, but are chewy on the inside. And for some reason, they tasted even better the next day.

The best part? You only need a handful of ingredients. They are also very versatile, so you can feel free to sub or add in ingredients as you please. I’m sure a few chocolate chunks in these wouldn’t hurt anyone ;) I hope you guys enjoy these as much as we did!

What you need:

2 cups Cashew Flour (Can sub almond flour)

1/3 cup coconut sugar

1 tsp cinnamon

1 tsp baking powder

1/4 tsp sea salt

2 tbsp unsweetened applesauce

1 Tbsp melted coconut oil

2 tbsp Nut Milk

3-4 Large Chopped Pitted Dates

Optional: Chopped cashews!

How to:

  1. Preheat oven to 350F.

  2. Combine all dry ingredients together, whisking until no lumps remain.

  3. Add in the applesauce, coconut oil, and nut milk, stirring until dough forms. Then, fold in the date pieces.

  4. Roll into small balls and place on a greased baking sheet. Gently press the balls down with the palm of your hand, slightly flattening them.

  5. Bake for 15 minutes, or until lightly golden brown around the edges. Careful to not over-bake!
