Apple Pie Trail Mix

I swear, while this was on the stovetop, my house smelled between a mix of a yankee candle and thanksgiving dinner - DELIGHTFUL. Like, heavenly. The apple pie spice, the maple, the toasted nuts; it’s a dream combination.

This mix is not only incredibly addicting, it is quick, easy, and utilizes pantry staples.

Ingredients:

  • 2 cups total nuts & seeds (I used walnuts, pecans, coconut, pumpkin seeds)

  • 2 tsp apple pie spice

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 1/4 tsp sea salt

  • 2 tbsp coconut sugar (or more maple, but adds a great brown sugar flavor)

  • 1 1/2 tbsp olive oil or ghee (can sub coconut oil)

  • 1/2-1 scoop protein powder (optional, may need to add a little more oil)

  • 3/4 cup apple chips (I used Bare Organics)

How to:

  1. Add all nuts and seeds to a medium pan over medium heat on the stovetop. Drizzle with oil or ghee. Stir frequently, until they start to get a little toasty.

  2. Add the maple syrup, vanilla, and spices. Continue to cook, stirring frequently, until toasted through. Add the protein powder and a little extra oil or ghee if adding. Stir until combined.

  3. Remove from heat. Fold in the apple chips.

  4. Store in an airtight container.
