White Chocolate Cinnamon Roll Cookies
Breakfast.. Snack.. dessert.. it doesn’t matter when you have these cookies, they are sure to hit the spot! And, you know, using oats in a recipe automatically makes it an acceptable breakfast option (wink, wink).
These cookies are heavenly, you guys and are a true test of patience while you smell them baking.. It literally made my apartment smell like I had a million of those seasonal bath and body works candles burning.
These cookies are so, so soft, full of all the warming spices, and are also very quick and painless to make! They are pretty versatile as well, so you can sub/add-in anything you’d like! Have fun with them!
For the glaze, I just mixed together some nut milk, cinnamon, vanilla extract with some monkfruit powdered sugar. If you can’t tolerate monkfruit, or don’t care about the sugar intake, you can sub in regular powdered sugar, omit it all together, or even make a vegan/paleo cashew frosting to go on top!
White Chocolate Cinnamon Roll Cookies

Ingredients:
- 1/2 cup oat flour ( you could try subbing almond flour for paleo! You may need to just add a little extra)
- 2 tbsp cinnamon
- 1/2 tsp cardamom
- 1/4 tsp nutmeg
- 1/2 tsp sea salt
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 3 tablespoons cashew butter
- 1/2 tbsp vanilla
- 1/3 cup compliant white chocolate chips
- 1/4 cup chopped pecans/walnuts
- 1/2 cup powdered monkfruit sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- Nut milk, as needed
Instructions:
- Preheat oven to 350F. Line a cookie sheet with parchment paper and set aside.
- Combine the wet ingredients, including the coconut sugar, until smooth. Then, add in the dry.
- Fold in the chocolate chips and nuts, if using.
- Using a cookie scoop, scoop dough onto the cookie sheet.
- Bake for 15-20 minutes (i have noticed the time varies depending on different brands of ingredients. Just watch them closely and don’t let them over-bake!)
- Remove from the oven and allow to cool.
- To make the glaze, combine the powdered sugar, cinnamon, and vanilla in a small bowl. Add 1 tbsp of nut milk at a time until you reach glaze consistency. ‘
- Glaze cookies as desired and allow time for the glaze to set. Enjoy!
