Lime Crinkle Protein Cookies

Soft, moist, addicting.. these cookies are my absolute fave! You can make them like typical crinkles, using powdered sugar, or coat them in your favorite flavored protein powder like I did! YUM.

Ingredients

  • 1 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp coconut sugar
  • 2 tbsp maple syrup
  • 1/4 tsp baking soda
  • 1/3 cup vegan butter/melted coconut oil
  • 1 1/2 tbsp lime juice + zest from 1/2 lime
  • 1 tsp vanilla
  • Pinch of sea salt
  • 1/3 cup protein powder or powdered sugar - I used blueberry protein powder

Instructions

  1. Preheat oven to 35F. Line a cookie sheet with parchment paper.
  2. Combine all ingredients together until dough forms.
  3. Drop by spoonfuls, or using a cookie scoop, onto the cookie sheet. Bake for 12 or so minutes or until lightly golden around the edges. Let cool.
  4. Add your flavored protein powder or powdered sugar to a plastic bag or bowl. I used blueberry protein and it was so yummy with these.
  5. Once completely cooled, gently add each cookie, one at a time, into the sugar or protein powder, covering it entirely. Gently shake any excess off.
  6. Store in an air-tight container in the fridge. Enjoy!
