Soft, moist, addicting.. these cookies are my absolute fave! You can make them like typical crinkles, using powdered sugar, or coat them in your favorite flavored protein powder like I did! YUM.
Ingredients
- 1 cup almond flour
- 1/3 cup tapioca flour
- 2 tbsp coconut sugar
- 2 tbsp maple syrup
- 1/4 tsp baking soda
- 1/3 cup vegan butter/melted coconut oil
- 1 1/2 tbsp lime juice + zest from 1/2 lime
- 1 tsp vanilla
- Pinch of sea salt
- 1/3 cup protein powder or powdered sugar - I used blueberry protein powder
Instructions
- Preheat oven to 35F. Line a cookie sheet with parchment paper.
- Combine all ingredients together until dough forms.
- Drop by spoonfuls, or using a cookie scoop, onto the cookie sheet. Bake for 12 or so minutes or until lightly golden around the edges. Let cool.
- Add your flavored protein powder or powdered sugar to a plastic bag or bowl. I used blueberry protein and it was so yummy with these.
- Once completely cooled, gently add each cookie, one at a time, into the sugar or protein powder, covering it entirely. Gently shake any excess off.
- Store in an air-tight container in the fridge. Enjoy!
