Half Baked Cookie Dough Brownies

Have you guys ever had Ben & Jerry’s half baked ice cream? If you answered no.. WHAT ARE YOU DOING WITH YOUR LIFE. Just kidding! I mean, it is definitely a life changing ice cream flavor, but far from something i’d recommend consuming. HOWEVER.. i’ve got you health-conscious readers covered. I was brainstorming some treat ideas and couldn’t get off that flavor of ice cream. ENTER these brownies! They are absolutely decadent and no one would ever guess they are refined-sugar, flour, and dairy free. They have a dreamy, chocolatey, brownie base, followed by a no-bake cookie dough layer, all topped off with chocolate, drizzle, and sea salt. Doesn’t get better than that!

Another great thing about this recipe, is it is very customizable. If you have a favorite brownie recipe, just use that. If you have a favorite “raw” or “no-bake” cookie dough recipe, use that! It’s all preference, which makes this even more convenient! I highly reccoment trying these out & tag me in your creations with #danishealthyeats so I can see!

Ingredients:

Brownie base

  • 1/2 cup almond flour

  • 1/2 tsp baking soda

  • 1/3 cup cacao powder

  • 2 flax eggs (or sub real eggs. 1 flax egg = 1 tbsp flax mixed with 2.5 tbsp water)

  • 1/4 tsp sea salt

  • 1/3 cup maple syrup

  • 1/2 cup coconut sugar

  • 1/4 cup melted coconut oil

  • 3/4 cup chopped chocolate

  • 1 tsp vanilla

  • 1/3 cup peanut butter

For the Cookie Dough:

  • 2 Tbsp coconut flour

  • 1 cup almond flour

  • 3 Tbsp Melted coconut oil

  • 3 Tbsp maple syrup

  • 1 tsp vanilla

  • 2 tbsp nut milk (or as needed)

  • 1/4 tsp sea salt

  • chocolate or chips (optional)

    Chocolate coating:

  • 1 1/3 cups chocolate

  • 1 tsp coconut oil

    1. Preheat the oven to 350F. Line a 8x8 baking tray with parchment paper and set aside.

    2. Melt the chopped chocolate and coconut oil together until smooth. Then, add in the peanut butter and remaining wet ingredients. Stir in the dry.

    3. Spread into the pan evenly and bake for 20-22 minutes or until just set. Remove from the oven and allow to cool completely.

    4. Blend all cookie dough ingredients in a food processor or blender until dough consistency. Spread on top of brownie layer.

    5. Melt coconut oil & chocolate bar together until completely smooth. Pour over cookie dough layer. You can add more chocolate drizzle once set, sea salt, or any additional toppings!
