Easy & Decadent Thin Mint Slice
The holidays are upon us & that means one thing.. ALL the fun, seasonal, treats and desserts that don’t grace our presences too often. So I have taken it upon myself to devote my spare time in making allllll the holiday inspired flavored treats! You’re welcome ;)
One Of my all time favorite flavor combinations, holiday season or not, is chocolate & mint. I feel like they compliment each other on such a deep level… okay, I’ll stop! But I am obsessed. But, I knew I wanted to create a nourishing, raw vegan, paleo dessert incorporating these. I also wanted it to be easy & full of ingredients that most have on hand. convenience makes them taste even better ;)
This raw thin mint slice is full of rich cacao flavor & the most perfect touch of peppermint You’ll be obsessed!
Base layer:
1/2 cups almonds & 1/2 cup walnuts
1 c. dates (I’ve also used cashew butter & it’s turned out!)
1/4 cup Raw cacao powder
3 tbsp melted coconut oil
1 tsp. peppermint extract
Top layer:
1/3 cup coconut cream or nut pods original flavor
1 bar dark chocolate (I used eating evolved)
1 1/2 tsp peppermint extract
Blend all base ingredients in food processor until dough forms. Press into bottom of desired pan. Heat the coconut milk or cream over medium heat until heated through. I heated mine until small bubbles were forming. Remove from heat & pour over chocolate bar. Stir until smooth & melted together. Add in peppermint extract. Pour ganache layer over bottom. Place in fridge to set. I then drizzled mine with more chocolate & added fresh mint leaves!
