Toasted Pecan Gingerbread Butter
So I am a self-proclaimed nut butter connoisseur. I absolutely love nut butters - cashew, sunflower, almond, peanut, macadamia nut, pumpkin seed.. you name it. I’ve even dabbled in homemade pistachio butter and it is a game changer. As of lately, i’ve been seeing so many different festive flavored nut butters around the internet & became quite inspired.
Growing up, I had a true love for cookie butter. Like the real cookie butter.. ground cookies that you could spread on anything? Nothing could beat that! So I got to thinking and came up with this idea: Toasted Pecan Gingerbread Butter. I was a little too lazy to make homemade gingerbread cookies to grind up, so I put a little spin on some regular ol’ pecan butter & it turned out QUITE tasty. I’ve been spreading this stuff on everything - apples, sandwiched between cookies, you name it. Toasted Pecan Butter:
3 cups pecans
2 Tbsp molasses
1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp pink Himalayan salt
2 tsp coconut sugar, maple syrup, or stevia
Preheat oven to 350F & toast pecans for about 8 minutes. Don’t let them burn! You just want a nice toast on them. This step is optional, but gives the butter an amazing flavor. Add pecans to a high-speed blender & blend until butter consistancy. Add the rest of the ingredients & blend until smooth. You may need to blend for about 5 minutes to get a runny, nut-butter consistency. It can be thick at first, but blending for awhile brings out the natural oils from the pecans & will make it smoother! Store in a mason jar or air tight container & enjoy on everything!
