Vanilla Almond Butter & Chocolate Rice Crispy Bars

I don’t think I have met many souls in this world that have said they don’t have memories of devouring those ooey gooey rice crispy treats. You know, the ones that came in the shiny blue wrappers with the little elves on the front? (Were they elves? .. I think they were elves!) They have forever been a favorite of mine, especially with the memories they bring back; when I was younger, probably around 10, and my mom and dad and I would make our own. I would get so excited, being able to put my own spin on them. I’d add Oreos.. I’d spread peanut butter on top.. You name it. This girl got CRAZY.

I’m sure most of you know by now, that I have a. huge passion for showing others that they although they may be beginning a health journey of their own, this does not have to mean DEPRIVATION. I love showing others how you can easily incorporate healthier ingredients into a recipe to make them NOURISHING and better for you. That’s what I did with these bad boys! All natural, no refined sugars or flours and they’re vegan, paleo, and can even be made Keto by replacing the rice crispies with chopped nuts! So I guess what I’m getting at.. is you have no excuse to not be making these RIGHT NOW and devouring them. ENJOY!

Rice Crispy layer:

3 Tbsp coconut oil

3 Tbsp RX bar Vanilla Almond Butter (or any nut butter of choice!)

1 tsp vanilla extract

Sprinkle of pink salt

1/2 tsp cinnamon (optional!)

2 cups rice crispies

Melt all ingredients, besides crispies, until smooth and fully incorporated. Then add in rice Krispies and gently fold in until combined. Press into a parchment-lined dish and place in freezer to set up.

Almond Butter Layer:

1/2 cup RX bar vanilla almond butter

2 1/2 tbsp maple syrup

2 1/2 tbsp coconut oil, melted

1 tsp vanilla

pinch of sea salt

Whisk all ingredients until fully combined. Spread over crispy layer!

Chocolate layer:
Melt desired chocolate bar with 2 tsp coconut oil. Spread over peanut butter layer evenly. I drizzled mine with more almond butter & a dash of sea salt!
