No Bake Seedy Chocolate Chip Fudge Cups

True life: I am a nut butter addict.

No shame in my game. I can proudly admit that. Nut butter is my JAM. I enjoy a tablespoon or two (who are we kidding.. more like 3-4) per day and cannot see myself quitting anytime soon. It compliments every baked good and can be a great pair in savory cooking as well. What is not to love?

But then.. I found seed butter. Sunflower seed butter in particular and my life somewhat changed. Now, my nut butter won’t be going anywhere, anytime soon.. However, it moved aside slightly to make a little cabinet space for our new friends.

I don’t discriminate, nut and seed butters are butters and I will happily enjoy them in all forms. But something about a good seedy butter is a great mix up from their typical peanut, almond, and cashew counterparts. This brings me to this recipe..

Quick, easy, minimal ingredients, and SO DAMN GOOD. You guys will love this sweet and salty combination and nothing beats big chocolate chunks. Let me know if you make these and enjoy!


All you need:

1 cup seed butter (or nut butter) I used Beyond Equator

1/4 cup melted coconut oil

2 tbsp maple syrup

Generous Pinch of sea salt

2 tsp vanilla extract

1 chocolate bar chopped or 1/3-1/2 cup chocolate chips

Chocolate topping:

1 chocolate bar of choice

1-2 tbsp melted coconut oil

How to:

  1. Combine all fudge ingredients, besides chocolate, in a bowl and stir until completely mixed.

  2. Fold in chocolate chunks/chips.

  3. Place a small amount in mini muffin tin liners (or a regular cupcake tin to make larger cups).

  4. Combine chocolate and coconut oil in a bowl and microwave until melted, stirring every 20 seconds.

  5. Pour a little chocolate over each cup.

  6. Place in the freezer to set. Top with sea salt, chocolate chips, or whatever your heart desires!

  7. Enjoy!
