Peanut Butter & Chocolate Oat Bars
So.. the purpose of this recipe was to create one of the tastiest, healthy, and easiest treat that I could, because after all of our other obligations, food (especially dessert) should not have to be over-complicated and should not have to lack on flavor.
I’m going to keep this post short & sweet (like the recipe) because I know you just want the goods! All you need is 4 ingredients, a pan, and a freezer. Yup! Just like that, you’ll have some of the most addicting little bars you ever did make! These are perfect to prep at the beginning of the week to have for breakfast, snacks, and even as a little after-dinner treat. Hope you enjoy!
You will need:
1 cup peanut butter* (see note)
1 cup maple syrup**
1 cup oats (or other add-ins)***
1 Chocolate bar of choice, divided
Coconut oil (as needed)
Instructions:
In a microwavable bowl, or over medium-heat on the stove top, melt your nut butter and maple syrup together until completely smooth. If your mixture is overly thick, you can add a tbsp of melted coconut oil to thing things out a bit, but you don’t want it to be too runny! (Sometimes I have to, sometimes I don’t).
Add in the oats, some of the chopped chocolate bar, or other add-ins of your choice, and stir to combine.
Press into a parchment-lined pan and place in the fridge/freezer until hardened.
Remove from the fridge and cut into squares. At this point, I melted the rest of the chocolate and drizzled it on top!
Store in the fridge/freezer!
Notes:
*You can use any nut butter of choice.
** I used Lakanto sweetener, as it is a lower-carb/glycemic sweetener. You can use DANISHEALTHYEATS fo ra discount here.
***I added in 1/2 cup oats, 1/2 cup chopped Brazil nuts, 1/3 cup chopped pecans and it was DELICIOUS. You can also add in cacao nibs, dried fruit, raisins, cinnamon, etc.
