Sunflower Seed Butter Cup Bars
As a nut butter connoisseur, you guys know it is not often that I stray away from my beloved nuts. However, I will for one exception; sunflower seed butter. If you haven’t tried it, I can honestly say you have not lived. It somehow is the perfect marriage of sweet and salty. It tastes great in no bake treats, baked goodies, and everything in between.
Why is it green? This is totally normal and is caused by a natural process. Do not be alarmed! Yes, if you bake with it, it may turn your banana bread green, but hey, it makes it more fun! And the color is definitely easy to put past you once you get a taste of it!
I whipped up these minimal ingredient, super quick and easy, sunflower butter cup bars and they were a massive hit. They are a nice change from my tradition peanut butter or almond butter cup bars, but just as addictive. Let me know if you give these a go and be sure to tag me on instagram at @danishealthyeats!
Sun Butter Cup Bars Base layer:
¼ cup sunflower seeds
¼ cup coconut flakes
1 tsp cinnamon
Pinch of sea salt ½ cup sunflower butter (or any nut butter of choice)
1 tbsp maple syrup
Center filling:
½ cup sunflower butter
1 tbsp maple syrup
Pinch of sea salt
Chocolate layer:
chocolate bar of choice
1 tbsp coconut oil
How to:
Blend all ingredients in a food processor until sticky dough forms. Press into a lined loaf pan and set aside.
For the filling, combine ingredients in a bowl and mix until combined. Spread evenly over the base layer. If you’re having trouble spreading your butter, try adding 1 tbsp melted coconut oil to the mixture.
Melt chocolate and coconut oil together until smooth. Stir to combine. Pour evenly over the filling mixture. Place in the freezer to set. Cut into slice and enjoy!
