Oatmeal Chocolate Chip Truffles

These oatmeal chocolate chip truffles are the perfect treat if you’re looking for something quick and easy, that are sure to curb your sweet tooth! They are the most luscious cookie dough balls dipped in salted chocolate with a fun crunch from the chocolate chips! They are vegan, paleo, and super versatile so you an switch up and/or ad-in anything you like! Let’s go!

Ingredients:

For the chocolate coating:

  • 1 chocolate bar of choice (or 1 cup chocolate chips)

  • 1-2 tbsp melted coconut oil

How to:

  1. Combine the nut butter, vanilla, sea salt, and maple syrup in a medium bowl, until completely smooth.

  2. Stir in the oats, almond flour, and chocolate chips.

  3. Roll into small balls and place in the freezer to Harden a bit.

  4. While your balls are hardening, melt your chocolate and coconut oil together until smooth.

  5. Remove the balls from the freezer. Dip each one in the chocolate, covering it entirely. Place on a parchment-lined baking sheet and put back in the freezer until the chocolate has hardened. Enjoy!
