Elvis Nice Cream Bars

Peanut butter, banana, chocolate, and walnuts.. I’ll just say, the man Elvis had good taste! These no bake ice cream bars are a dream. They’re quick, easy, don’t require too many ingredients, and are no bake; paleo and vegan, too!

The base is a mixture of Nature’s Eats Walnut flour with a touch of peanut butter, topped with a banana nice cream, drizzled in chocolate and peanut butter sauce.

Ingredients:

 For the crust:

1 ½ cups Natures Eats Walnut Flour

2 Tbsp melted coconut oil

2 Tbsp maple syrup

1 tbsp peanut butter

½ tsp cinnamon

¼ tsp sea salt 

For the banana nice cream layer:

2 ripe bananas

3 tbsp peanut butter

1 tsp vanilla

¼ tsp sea salt

2 tbsp soft coconut oil

2 tbsp coconut cream (can sub more coconut oil)

For the drizzle:

Peanut butter: 2 tbsp peanut butter, ½ tbsp coconut oil, ¼ tsp vanilla. Melt together until smooth. Drizzle over the top.

Chocolate drizzle: 1 chocolate bar + 1 tbsp coconut oil. Melt together until smooth. Drizzle over the top.

How to:

1.     Combine all ingredients in a large bowl, mixing until your dough forms. Press into the bottom of a lined 8x8 baking dish. Set aside.

2.     To form the banana nice cream layer, combine all ingredients in a food processor, processing until completely smooth. Taste, adjust your sweetness/seasonings as needed. Pour over the crust.

3.     Decide which toppings you’d like to drizzle your bars with. Follow the above instructions, drizzling/frosting the bars as desired. Place in the freezer to set. Enjoy!
