This chia pudding makes for the perfect meal prep, breakfast on the go, or healthy snack! It'll keep you satiated and tastes SO GOOD.

Ingredients

Pudding
  • 4 tbsp cacao powder
  • 3 tbsp ground flaxseed
  • 1/3 cup chia seeds
  • 2 cups plant milk
  • 1-2 tbsp protein of choice (can omit)
  • 1/2 tsp vanilla
  • 3-4 tbsp maple syrup or monk fruit
  • 2 tbsp almond butter
Topping
  • 1/4 cup white chocolate
  • 3 tbsp coconut yogurt
  • coconut flakes & chopped walnuts or pecans, to your liking

Instructions

  1. Add all of the chia pudding ingredients to a blender, blending until smooth. Taste & adjust as you'd like.
  2. Divide the mixture amongst two jars. Place in the fridge.
  3. To make the topping, melt the chocolate in a heat-safe bowl. Once smooth, stir in the yogurt and almond butter.
  4. Carefully spread a little of the melted chocolate mixture over top of the puddings. Then sprinkle over the coconut and walnuts/pecans.
  5. Place back in the fridge for at least 30 minutes to overnight, to allow everything to firm up. Enjoy!
