This chia pudding makes for the perfect meal prep, breakfast on the go, or healthy snack! It'll keep you satiated and tastes SO GOOD.
Ingredients
Pudding
- 4 tbsp cacao powder
- 3 tbsp ground flaxseed
- 1/3 cup chia seeds
- 2 cups plant milk
- 1-2 tbsp protein of choice (can omit)
- 1/2 tsp vanilla
- 3-4 tbsp maple syrup or monk fruit
- 2 tbsp almond butter
Topping
- 1/4 cup white chocolate
- 3 tbsp coconut yogurt
- coconut flakes & chopped walnuts or pecans, to your liking
Instructions
- Add all of the chia pudding ingredients to a blender, blending until smooth. Taste & adjust as you'd like.
- Divide the mixture amongst two jars. Place in the fridge.
- To make the topping, melt the chocolate in a heat-safe bowl. Once smooth, stir in the yogurt and almond butter.
- Carefully spread a little of the melted chocolate mixture over top of the puddings. Then sprinkle over the coconut and walnuts/pecans.
- Place back in the fridge for at least 30 minutes to overnight, to allow everything to firm up. Enjoy!
