No Bake Strawberry Shortcake Tart

Need a summer dessert? This is it! This tart requires no baking, comes together super fast, and is bursting with strawberry flavor!
Ingredients
base
- 1 cup shredded coconut
- 1/2 cup walnuts (or other nut/seed)
- 1/4 cup maple syrup
- 2-3 tbsp cashew butter (or almond)
- 1 tsp vanilla + pinch of sea salt
filling
- 1/2 cup cashew butter
- 1/4 cup vegan cream cheese (I use the Miyokos brand)
- 1 cup full-fat canned coconut cream (the solid part from the top of the can, and then any remaining liquid to make 1 cup)
- 1 1/2 tsp vanilla
- 1 cup chopped strawberries (fresh or frozen)
- 1/3 cup maple syrup
- Pinch of sea salt
- Optional: Coco whip for topping & a little extra of the crust to crumble over the top!
Instructions
- Pulse all of the base ingredients in a food processor until a sticky dough forms. Press into the bottom of a pie pan (you can also make these into bars!) Set aside.
- Blend all of the filling ingredients, besides the strawberries, until completely smooth. Taste & adjust as needed.
- Then add in the strawberries, pulsing until combined. Spread the filling over the base.
- Place in the freezer until set! Cut into slices and enjoy!
