Sesame Tempeh Collard Wraps with Tahini Dipping Sauce

These wraps are filling, nourishing, and packed with flavor! I love these as a quick lunch!
Ingredients
Tempeh
- 1 tbsp rice vinegar
- 1 tbsp Liquid aminos
- 1 tbsp Almond Butter
- 1 tbsp Sesame Oil
- 1 tbsp golden or maple syrup
- Piece of fresh grated ginger
- 1/4 tsp red pepper
- 1 8 ounce block of tempeh
Wraps
- 1 Bunch Collard Greens
- 1/2 cup shredded carrots
- 1 medium bell pepper, chopped
- 1/2 cup Napa Cabbage - if tolerated
- 1 bunch scallions
- 1/4 cup chopped fresh cilantro
- 2 tbsp pumpkin seeds
Dipping Sauce
- 1 tbsp tahini
- 2 tsp liquid aminos
- 1/2 tbsp rice vinegar
- 1/2 tbsp sesame oil
- 1/2 tsp maple syrup
Instructions
- Whisk together all of the marinade ingredients in a shallow bowl until smooth. Add the tempeh pieces and coat thoroughly in the marinade. Refrigerate for at least 2 hours.
- Preheat the oven to 375°F. Place the marinated tempeh on a baking sheet and bake for 12-15 minutes, then flip the pieces over and bake for another 5-10 minutes. Remove and let cool.
- Assembling the wraps: Blanch the collard greens in boiling water for 1-2 minutes until softened. Let dry.
- Fill the collards with your desired fillings and tempeh. Gently wrap them up.
- To make the dipping sauce, whisk everything together until smooth. Taste and adjust as needed.
