Sesame Tempeh Collard Wraps with Tahini Dipping Sauce

These wraps are filling, nourishing, and packed with flavor! I love these as a quick lunch!

Ingredients

Tempeh
  • 1 tbsp rice vinegar
  • 1 tbsp Liquid aminos
  • 1 tbsp Almond Butter
  • 1 tbsp Sesame Oil
  • 1 tbsp golden or maple syrup
  • Piece of fresh grated ginger
  • 1/4 tsp red pepper
  • 1 8 ounce block of tempeh
Wraps
  • 1 Bunch Collard Greens
  • 1/2 cup shredded carrots
  • 1 medium bell pepper, chopped
  • 1/2 cup Napa Cabbage - if tolerated
  • 1 bunch scallions
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp pumpkin seeds
Dipping Sauce
  • 1 tbsp tahini
  • 2 tsp liquid aminos
  • 1/2 tbsp rice vinegar
  • 1/2 tbsp sesame oil
  • 1/2 tsp maple syrup

Instructions

  1. Whisk together all of the marinade ingredients in a shallow bowl until smooth. Add the tempeh pieces and coat thoroughly in the marinade. Refrigerate for at least 2 hours.
  2. Preheat the oven to 375°F.  Place the marinated tempeh on a baking sheet and bake for 12-15 minutes, then flip the pieces over and bake for another 5-10 minutes. Remove and let cool.
  3. Assembling the wraps: Blanch the collard greens in boiling water for 1-2 minutes until softened. Let dry.
  4. Fill the collards with your desired fillings and tempeh. Gently wrap them up.
  5. To make the dipping sauce, whisk everything together until smooth. Taste and adjust as needed.
