Mediterranean Pizza w/ Seitan Gyro Meat

I'm going to start off this post with saying that this pizza was DEVOURED. There wasn't a slice left. And I'm a little bitter, because I only got one slice.. All is good though, as I get some weird satisfaction cooking for people & watching them thoroughly enjoy it. We have pizza/flatbread a lot (paleo, of course) and we always like to get creative & see what we can come up with. Well, the last week I could not get greek food out of my head.. My boyfriend & I had went to this gyro restaurant & they served these greek nachos that were absolutely insane. So, not to any surprise, one night when I was craving gyros and my boyfriend was craving pizza... naturally, we combined the two. & it was a GREAT idea. I shared a slice with my dad & even he enjoyed it (I always say the best predictor of the success of a recipe is if someone who isn't into "healthy" foods actually enjoys it).

Now, we aren't vegan. We follow a plant-based diet but we do consume some sea food. However, lately I've been craving plant-based proteins over fish. I know not all can tolerate gluten, but I have been loving seitan and it's versatility. It has a meat-like texture & takes seasoning very well. If you can't tolerate gluten (or your tastebuds don't prefer it) you can always sub in some tofu, meat, or whatever protein you prefer. BUT, if you are a fan of seitan, I HIGHLY recommend trying this recipe. It was really, really good.

I used the Gyro Seitan recipe from: https://www.geniuskitchen.com/recipe/seitan-gyro-meat-447454 . As I mentioned before, I highly recommend trying it out. It's super easy!

Ingredients:

  • Home-made or store-bought cauliflower crust pizza (I used Trader Joe's brand. I LOVE it. Best crust I've tried yet. Or you can make your own!)

  • Preffered protein

  • 1/2 cup roasted Sweet potatoes

  • 1/2 cup roasted chickpeas

  • 1/2 cup diced, sautéed cauliflower

  • 1/2 onion, diced & sauteed

  • Spinach

  • Drizzle of olive oil (optional)

  • 1/4 cup diced sun-dried tomatoes

  • 1/4 cup diced green or kalamata olives

  • Tahini Drizzle (I used Karam's Tahini Garlic Sauce) But you can make your own using tahini, lemon, garlic, salt, & pepper!

Follow cooking directions on crust package (unless making your own). Saute onions until translucent. Add cauliflower and sauce until soft. Spread tahini sauce on crust, top with spinach, then sautéed onion & cauliflower, protein source, roasted chickpeas & sweet potatoes, sun-dried tomatoes, & the olives. Drizzle with olive oil. Bake until done! Top with a little extra tahini drizzle. We also added a sprinkle of hemp seeds on top for a little extra nutrient boost!
