Falafel Bowl with Tahini Goddess Dressing

I have this thing for falafels.. I absolutely love them, always crave them, yet NEVER make them! Beats me too, as they are so easy, keep up well, & aren’t time consuming. I don’t know what i’ve been doing. Due to consuming a paleo-based diet, I usually opt for my favorite paleo falafels made with riced cauliflower and herbs as the base. However, this week I wanted the real deal and had a can of chickpeas laying around that needed to be used up. Enter… these tasty bad boys! They turned out lie falafel patties.. because I couldn’t find my cookie scoop and #lazy. So I kind of plopped spoonfuls onto a cookie sheet and they turned out just as delicious. These are great to meal-prep ahead of time, full of fiber and protein, and are super versatile!

Now.. don’t even get me started on this tahini sauce. You guys.. I have been dipping EVERYTHING in this stuff.. even my fingers.. I am not ashamed. The best part about it is how quick and painless it is! You just chuck everything into a blender and call it a day. And the nutritional benefits of it are just an added bonus! Falafels:

  • 2 cups chickpeas

  • 1/2 cup almond flour or chickpea flour (I have even used flax meal)

  • 1 onion, chopped

  • 1/2 cup cilantro & 1/2 cup parsley

  • 3 cloves garlic

  • 1 Tbsp cumin

  • 1 tsp chili powder

  • 1 tsp turmeric

  • 1/2 tsp pepper

  • 1 tsp sea salt

  • squeeze of 1/2 lemon

Pulse all ingredients in a food processor until combined. Don’t overrules, you don’t want it to become runny! Mold into balls, patties, whatever you desire. I air-fried mine on 375 for about 20 minutes (flipped halfway through). You can bake at 375 for around the same time and just keep an eye on them! They’ll probably need around 25 minutes. I would remove them once they’re firm to touch & golden!

Tahini Goddess Dressing

  • 1/2 cup roasted tahini

  • 1/2 cup olive oil

  • 5 tbsp lemon juice

  • 2 cloves garlic

  • 2 tbsp parsley

  • 1 tbsp cilantro

  • 2 tbsp liquid aminos or coconut aminos

  • 3 tbsp apple cider vinegar

  • 1/2 cup water to thin if needed

    Place all ingredients except water in bender & blend until smooth. Add water to reach desired consistency (you can omit it altogether). You can switch up the herbs & seasonings to change things up & make it to your liking. I’ve even added basil, which is great. Enjoy!
