Samoa Cookie Protein Slice
I have no words, friends.
Seriously. I have and always will be a sucker for a Samoa Girl Scouts cookie. However, sadly, they only come around for a short time. You guys also know my love for recreating my favorite treats in a more healthy, whole-food, nutrient dense way. So why not give the original Samoa a little healthy makeover!? This way, we can enjoy them all year round!
These addicting little slices have a protein-packed shortbread base, topped with the creamiest coconut-caramel center, and are topped off with chocolate. What more could you need!? And the topping on the cake? They only require a handful of ingredients, one bowl, and are pretty quick and painless to make!
For the shortbread base:
1/2 cup protein
1/2 cup coconut flour
3 tbsp melted coconut oil
3 tbsp maple syrup
1 tsp vanila
Pinch of salt
Filling:
3 tbsp melted coconut oil
1/2 cup nut butter of choice
2 tsp vanilla
pinch of sea salt
1/3 cup maple syrup
1 cup toasted unsweetened coconut flakes
Topping:
1 chocolate bare of choice (or about 3/4 cup chocolate chips)
1-2 tbsp melted coconut oil
How to:
Preheat oven to 350F. Line a loaf pan with parchment paper and set aside.
Combine all crust ingredients in a bowl until a dough forms. Press into the bottom of the prepared loaf pan and bake for 10-12 minutes or until lightly golden brown around the edges.
Remove from the oven and allow to cool.
To make the filling, start by toasting your coconut. Spread the flakes on a baking sheet and place in the preheated oven (still at 350F). Check on them every couple of minutes, stirring them up as you do. Be sure to check on them frequently as they burn quickly! Remove from the oven once toasty and golden.
Combine all other filling ingredients into your bowl and mix until completely smooth. Then, fold in the toasted coconut flakes. Spread over the cooled crust.
Melt the chocolate and coconut oil together until smooth and runny. Pour over the coconut layer. Tilt the pan to ensure the chocolate evenly coats the filling layer.
Place in the freezer until set. Slice into pieces and enjoy!
