White Chocolate Protein Snickers
You guys know my obsession with recreating candy bars. Snickers were always one of my favorite treats goring up, which is great, because they are super easy to create in a healthier way. Honestly, I prefer my raw vegan & paleo snickers over the traditional candy! Maybe due to how decadent they taste.. maybe because I know they’re full of whole-food ingredients.. Maybe it’s a mixture of it all. But I am OBSESSED.
This time around, I added protein to the base. I also topped them in a vegan, stevia-sweetened white chocolate. You have a couple of options here. If you are not watching your refined-sugar intake, feel free to use regular white chocolate or a vegan version. If you are paleo, you can create a home-made white chocolate coating. I will leave an option below for that!
As far as nut butters go, you can use whatever you like. This recipe is incredibly versatile, so feel free to use whatever you have on hand or whatever fits to your dietary preferences.

Base
· 1/2 cup pitted dates
· 1/2 cup peanuts
· 14 cup Cookie Dough Protein Powder (“amb-dani “ gets you a discount! can sub more coconut flour)
· 1/4 cup coconut flour
· 2 tbsp maple syrup
· 2 tbsp melted coconut oil
· ¼ cup nut butter (I used salted caramel almond butter. Dani20 gets ya a discount!)
Peanut Caramel Layer:
· 1/2 cup salted caramel nut butter (DANI20 gets you an exclusive discount)
· 1/4 cup melted coconut oil
· 3 tbsp maple syrup
· 1 tsp vanilla extract
· pinch sea salt
· ¼-1/3 cup chopped peanuts
White Chocolate Layer:
· 1 cup white chocolate chips (or sub regular)
· 1 tbsp coconut oil
Paleo Raw/Vegan White chocolate Options:
1 c. melted cacao butter
1/2 cup soaked cashews
1/2 cup maple syrup
1 tsp vanilla
1 tbsp water
How to:
1. Combine all ingredients in a food processor and process until a dough forms. Press into a lined loaf pan and set aside.
2. Make the caramel layer by placing the peanut butter, oil, maple syrup, vanilla, and salt in a microwave-safe bowl. Microwave for 20 second intervals, stirring in between, until completely smooth. Pour over the base layer, then sprinkle over the chopped peanuts. You can gently press them into the caramel layer if you like.
3. Melt the white chocolate and coconut oil together until smooth. Pour over the caramel layer. Place in the freezer until set!
4. Remove, cut into slices, and enjoy!
To make the paleo/raw/vegan white chocolate option:
Combine all ingredients, besides melted cacao butter, in a food processor, processing until completely smooth. Add in the melted cacao butter and pulse until combined. Pour over the caramel layer and place in the freezer until set. Enjoy!
