Trail Mix Truffles
True life: I used to be addicted to fruit and nut mix.
No, really. I could easily open a bag of trail mix, only to look down minutes later, to realize that I had devoured the entire bag.. Or, let’s be real, just the m&ms. Because, as I always say, there are two ingredients that make up trail mix: M&M’s and disappointment.
These no bake truffles are full of good-for-you ingredients. They are a great source of fiber, healthy fats, and protein, making them the perfect snack to have on hand throughout the week for when you need a little boost or that sweet craving hits. They take only a few minutes, require minimal ingredients, and are super versatile so you can create them using your favorite things!
Ingredients:
3/4 cup runny nut butter
1/4 cup coconut flour or protein powder
1/2 tsp vanilla
1/2 tsp sea salt
1/4 cup maple syrup
1/2 cup mix-ins (I used nuts & seeds, dried fruits, & cacao nibs)
Coating:
1 1/2 chocolate bars
1 tbsp coconut oil
Instructions:
Combine all ingredients besides the mix-ins in a large bowl. Mix until a dough forms. If your mixture is way too dense, you can add 1 tbsp melted coconut butter to help things move along.
Fold in your mix ins.
Using a cookie scoop, or rolling into balls using your hands, set the balls on a lined cookie sheet. Place in the freezer for about 10 minutes to slightly harden.
Melt your chocolate and coconut oil together until completely smooth. Dip each ball in the chocolate and return to the cookie sheet. Place back in the freezer until the chocolate has hardened. Enjoy!
