No-Bake Sugar Cookie Protein Bars

These are such a quick & easy meal prep for when you need a little sweet treat or boost of protein!
Ingredients
- 1 1/2 cups almond flour
- 1/4 cup protein powder (I used vanilla)
- 2 tbsp coconut flour
- 1/4 tsp almond extract
- 1/2 cup almond or cashew butter
- 1/3 maple syrup
- 1-2 tbsp monk fruit or coconut sugar
- 1-2 tbsp plant milk
- Pinch of sea salt
Frosting
- 1/4 cup almond butter
- 2 tbsp maple syrup
- 1-2 tbsp protein powder
- 1 tbsp plant milk, if needed
Instructions
- Combine all of the dough ingredients together until dough forms. Taste & adjust as needed. Depending on the protein you use, you may want to add more maple or need to add more plant milk, if needed to reach dough consistency.
- Press into the bottom of a lined loaf pan.
- To make the frosting, mix everything together until smooth. Add the plant milk, a little at a time, until frosting consistency. Spread over top of the bars.
- Place in the freezer to harden, cut into bars, & enjoy!
