These protein bars taste just like sugar cookies, especially with the frosting! They take a few minutes to make and are the perfect treat to prep for the week!

Ingredients

Bars
  • 1/4 cup vanilla protein powder
  • 6 tbsp almond flour
  • 1/2 cup oat flour
  • 4-5 tbsp maple syrup
  • 1/2 cup + 2 tbsp runny almond or cashew butter
  • 1/2 tsp almond extract + Pinch of sea salt
  • 1 tbsp melted coconut oil (if needed)
  • Frosting of choice

Instructions

  1. Combine all the ingredients together until dough forms. If your dough is dry (depending on the protein powder you use) you may want to add a tbsp of melted coconut oil to bring things together to form a cookie dough texture).
  2. Frost with your favorite frosting. I use the Simple Mills or Birch Bender brands, to keep this whole-foods based. Or you can make your own cashew frosting. I added a little pomegranate juice to my frosting to make it the pink color. Frost & place in the freezer for an hour or two to firm up before cutting into bars.
  3. Store in the freezer & let thaw a few minutes before eating.
