Cinnamon Sugar Sweet Potato Bite Appetizer

Such a fun and easy appetizer! Cinnamon sugar roasted sweet potato rounds, topped with a toasted mallow, and chopped pecans!
Ingredients
- 4medium sweet potatoes sliced into 1/4" thick rounds
- 2 tbsp melted vegan butter or coconut oil
- 1 tsp coconut sugar
- 1 tsp cinnamon
- Pinch of sea salt
- 1 bag marshmallows (whichever fit your dietary preferences!)
- 1/2 cup pecan halves
Instructions
- Preheat the oven to 400F.
- Slice your sweet potatoes in 1/4" rounds.
- Place them in a large bowl and drizzle the melted butter/oil over top, making sure they are all evenly coated. Sprinkle in the cinnamon, coconut sugar, and sea salt. Toss to evenly coat.
- Place on a lined baking sheet, making sure they all have enough room. Bake until tender, about 20 minutes, flipping half way through. You can cook them a few minutes longer for a crispier bite.
- Turn the oven to broil and add a marshmallow to each round. Broil until the marshmallow is toasty (be careful, they burn fast!)
- Top with a pecan half and serve!
