These cookies are the perfect addition to the holiday dessert table! They melt in your mouth and are dangerously addictive!

Ingredients

  • 1 cup pecans
  • 1 1/2 cups almond flour
  • 1/2 cup vegan butter or ghee, softened
  • 1/2 cup Monkfruit Powdered Sugar
  • 1 tbsp coconut sugar
  • 1 tsp vanilla
  • 1/4 tsp cinnamon (optional)
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 350F. 
  2. Add the pecans to a food processor, processing until a fine meal forms. A few chunks are okay!
  3. Add the remaining ingredients and process until your cookie dough forms.
  4. Roll the dough into balls and place on the lined cookie sheet.
  5. bake for 15 or so minutes, until golden around the edges. Let cool.
  6. Optional but SO yum - roll the cooled cookies in extra monkfruit powdered sugar!
