Butter Pecan Snowball Cookies

These cookies are the perfect addition to the holiday dessert table! They melt in your mouth and are dangerously addictive!
Ingredients
- 1 cup pecans
- 1 1/2 cups almond flour
- 1/2 cup vegan butter or ghee, softened
- 1/2 cup Monkfruit Powdered Sugar
- 1 tbsp coconut sugar
- 1 tsp vanilla
- 1/4 tsp cinnamon (optional)
- Pinch of sea salt
Instructions
- Preheat your oven to 350F.
- Add the pecans to a food processor, processing until a fine meal forms. A few chunks are okay!
- Add the remaining ingredients and process until your cookie dough forms.
- Roll the dough into balls and place on the lined cookie sheet.
- bake for 15 or so minutes, until golden around the edges. Let cool.
- Optional but SO yum - roll the cooled cookies in extra monkfruit powdered sugar!
