This cake is absolutely delicious, you'd never guess it was healthy! Cinnamon apple cake, full of caramel, and topped with vegan cream cheese frosting! Boxed mix makes this incredibly easy and the homemade caramel comes together super quickly!
Ingredients
- 1 Simple Mills apple cinnamon muffin mix (Could sub home-made cake)
- 2 apples, cubed
Caramel
- 1/2 cup coconut sugar
- 5 oz can coconut milk, full fat
- 1/2 tsp sea salt
- 1 tsp coconut oil
- 1 tsp vanilla extract
Cream Cheese Frosting
- 1 cup vegan cream cheese
- 4 tbsp maple syrup, as needed
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350F.
- Prepare your muffin mix according to the box instructions. Then, fold in the apple chunks.
- Spread into an 8x8 baking dish and bake according to the instructions, until a toothpick inserted comes out clean. Don't over-bake. Let cool.
- While your cake is baking, make the caramel by adding the coconut milk, oil, & sugar to a pan over medium-high heat. Bring to a boil, stirring constantly. Then, reduce to a simmer, stirring frequently, until it reduces to a caramel consistency. Stir in the sea salt and vanilla.
- Poke holes all over the cake using the back of spoon. Pour the caramel over the cake, letting it sink into the holes.
- To make the frosting, combine everything together until smooth. Spread over top of the cake.
- Place in the fridge until ready to serve!
