No Sugar added Strawberry Cheesecake Stuffed French Toast
I have a confession to make.. i’ve made this three times this week alone.. and I’m so not ashamed. It is just too easy, super decadent, and curbs a sweet tooth craving without any added sugar!

Strawberry Shortcake Cheesecake Stuffed French Toast

Ingredients
- 8 slices Silver Hills Sprouted Bread
- 1/4 cup chia seeds
- 1 ½ cups plant milk
- 1 tsp vanilla
- 1/4 tsp cinnamon
- (You can add a tbsp or 2 of sweetener if desired)
- 1/2 cup vegan cream cheese (I use Miyokos brand)
- 1/4 cup unsweetened strawberry jam
- 1/2 cup almond flour
- 1 package unsweetened freeze dried strawberries
Instructions
- In a wide bowl, mix together the vanilla, chia seeds, and plant milk. Set aside for a few minutes to thicken.
- In a small bowl, mix together the cream cheese and jam.
- For the crumble, smash the freeze-dried strawberries until they are mostly crumbs. Add to a small bowl along with the almond flour and mix until combined.
- Heat a non-stick pan over medium heat. Dip two slices of bread into the chia mixture and place them on the heated pan. Cook for a couple of minutes until cooked to how you like it and then flip them. While they are cooking on the other side, spoon a little bit of the cream cheese mixture over one of the slices. When the French toast is done, place the slice of bread without the cream cheese, over the one with it. Remove from the pan, onto your plate. Repeat.
- You can cut them into French toast sticks or leave them as whole French toast! Top with the crumble. Enjoy!
