Chocolate Chip Collagen Toffee Bars

These bars are absolutely to die for! They’re easy, super flavorful, and full of collagen. Vegan? Simply just leave it out!

However, I did used Indigo Marine Collagen in these, which is:

  • Keto Friendly

  • Paleo Friendly

  • Whole30 Friendly

  • Gluten, Dairy and Soy Free

  • Kosher Certified

Marine collagen has higher bioavailability and can be absorbed quicker than bovine collagen. Many brands use multiple sources to get multiple types of collagen – like egg, chicken and bovine. They have 1 source (wild caught white fish) to get types I, II, III, and IV of collagen. If you’re looking for a high quality Collagen powder, I highly recommend this one!

These bars are my absolute favorite. They taste like they have notes of toffee and caramel, they’re salty and sweet, with a touch of cinnamon - all the best things! They’re made in one bowl, come together super quickly, and are sure to please everyone!

They have a bit of a protein kick with the addition of marine collagen. You can omit this, but if you do consume collagen, it’s a great way to add a little boost to your treats!

As for the oat flour, I haven’t tested other subs, but you could try subbing 1/2 cup arrowroot and 1/2 cup more almond flour. This typically works, but I can’t make promises! Stay tuned - i’ll test subs soon!

These toffee bars will make your house smell better than any Bath and Body Works Candle – I am serious. They smell heavenly, and taste just as good as well. The mixture of coconut sugar, chocolate chips, and toasted coconut cannot be beat! They are made with whole-food ingredients, have a little boost of protein too!

Ingredients

  • 1 Cup Oat Flour
  • 1 cup almond flour
  • 2 scoops Indigo Marine Collagen
  • ½ tsp baking soda
  • 1 tsp vanilla
  • ½ cup coconut sugar
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • 2 tbsp cashew butter
  • 5 tbsp softened coconut oil, ghee, or vegan butter
  • 1 egg or 1 flax egg (1 tbsp ground flax mixed with 2.5 tbsp water)
  • Toppings: chocolate chips, toasted coconut

Instructions

  1. Preheat oven to 350F.
  2. Combine the egg, oil or butter, sugars, and vanilla, and whisk until fluffy and well combined. Then mix in the dry until your dough forms.
  3. Press into the bottom of a lined or greased 8x8 baking dish. Sprinkle the toppings over top.
  4. Bake for 18-20 minutes, or until the edges have begun to golden.
  5. Remove from the oven and let cool completely before cutting into bars.
  6. Enjoy!
