These cinnamon sugar pinwheels are so addicting! They look pretty but are super simple to make! Slightly crunchy on the outside and so yummy warmed up!
Ingredients
Cookies
- 1 cup almond flour
- 1/3 cup tapioca or arrowroot flour
- 2 tbsp coconut sugar
- 2 tbsp maple syrup
- 1/3 cup vegan butter, oil, or ghee
- 1/4 tsp baking soda
- 1 tsp vanilla + pinch of sea salt
Cinnamon Sugar Sprinkle
- 1 1/2 tsp cinnamon
- 1 tbsp coconut sugar
Instructions
- Preheat your oven to 325F.Combine the cookie ingredients until dough forms.Roll out into a thin rectangle on parchment paper. Mix together the cinnamon and sugar and sprinkle over the dough. Using one end of the parchment paper, start rolling the dough up into a log. Place in the freezer for 20 mins to make the cutting easier.Cut the log into 1” pieces & place on a lined baking sheet. Flatten the cookies down using your palm. Bake for 12-14 mins or until the edges are golden. Enjoy!
