This cookie bark smells heavenly, is full of protein, & super easy to make. It tastes just like the OG speculoos and I can't get enough!

Ingredients

  • 1 1/4 cup oat flour
  • 1/4 protein powder
  • 1/2 tsp baking soda
  • 1/3 cup vegan butter or oil
  • 1 tsp molasses
  • 2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • 1/2 tsp nutmeg
  • 1 tsp ginger
  • 1/2 tsp sea salt
  • 1/3 cup coconut sugar

Instructions

  1. Preheat the oven to 350F. Line a cookie sheet with parchment paper.
  2. Combine all ingredients until well mixed. If your dough is too  crumbly, add 1 tbsp of plant milk at a time, but you want to be able to roll the dough out without it sticking, so you don't want it too moist.
  3. Place the dough on the parchment paper and roll it out into a long rectangle, about an inch thick.
  4. Bake for 15-20 minutes (time varies depending on ingredients used) until golden. Remove from the oven to cool. (The longer you bake, the crunchier they will get!)
  5. Cut into slices and drizzle over white chocolate.
