This cookie bark smells heavenly, is full of protein, & super easy to make. It tastes just like the OG speculoos and I can't get enough!
Ingredients
- 1 1/4 cup oat flour
- 1/4 protein powder
- 1/2 tsp baking soda
- 1/3 cup vegan butter or oil
- 1 tsp molasses
- 2 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp cardamom
- 1/2 tsp nutmeg
- 1 tsp ginger
- 1/2 tsp sea salt
- 1/3 cup coconut sugar
Instructions
- Preheat the oven to 350F. Line a cookie sheet with parchment paper.
- Combine all ingredients until well mixed. If your dough is too crumbly, add 1 tbsp of plant milk at a time, but you want to be able to roll the dough out without it sticking, so you don't want it too moist.
- Place the dough on the parchment paper and roll it out into a long rectangle, about an inch thick.
- Bake for 15-20 minutes (time varies depending on ingredients used) until golden. Remove from the oven to cool. (The longer you bake, the crunchier they will get!)
- Cut into slices and drizzle over white chocolate.
