White Chocolate dipped Almond Butter Caramel Cookies
These cookies are hands down a staple in our house. We actually fight over the last one. They are also pretty enjoyable to make, as they are super quick, easy, and versatile. You can use whatever you have on hand, making life SO darn easy! They have a crunchy cookie base, topped with a gooey almond butter caramel, and are then dipped in white chocolate. They are incredibly satisfying! I hope you love them as much as we do!
Almond Caramel White Chocolate Dipped Cookies

These cookies are to die for! So quick and easy, with a cookie base, almond caramel topping, and all dipped in white chocolate! So yummy!
Ingredients:
base
- 1 cup almond flour
- 2 Tbsp melted coconut oil
- 3 Tbsp maple syrup
- 1/2 tsp vanilla
- 1/2 tsp almond extract
- pinch of sea salt
Caramel
- 1/2 cup Almond butter
- 1/4 cup maple syrup
- 1/4 tsp sea salt
White Chocolate coating
- 1 1/2 cups white choc chips (that fit your dietary needs!)
- 1 tbsp coconut oil
Instructions:
- Preheat oven to 350. Combine all cookie ingredients until dough forms. Roll into balls & place on cookie sheet.
- Press the balls down with your palm & make a small indent in the centers. Bake for 15 minutes or until set & golden. Let cool.
- To make the caramel, combine all ingredients until smooth. Divide amongst the cookies, filling the small indents. Place in freezer for 15 mins to harden.
- Melt chocolate & coconut oil together until smooth. Dip each cookie in the chocolate & return to the freezer until it’s set! Enjoy! (Store in the fridge!)
