Pumpkin Spice Stuffed Oreos
Pumpkin spice szn baby! Bring on alllll the fall recipes! I. Can’t. Wait! To be completely honest with you, I am very picky when it comes to my pumpkin flavored goodies.. like starbucks PSL? No thanks. Not a fan. And in baked goods? It just has to be the right amount..
I love these so much, because the pumpkin spice is so versatile! You can leave it out, add more, do whatever your heart desires with it! I think, paired with the chocolate cookies, it’s the perfect amount! Not too strong, but there, you know? These are super quick, easy, and taste amazing! I hope you enjoy them!

Pumpkin Spice Oreos

Yield: 6 Large Cookies

Homemade oreo cookies filled with a super quick and simple pumpkin spice whip!
Ingredients:
Oreos
- 3/4 cup + 2 tbsp almond flour
- 3 tbsp arrowroot/tapioca flour
- 1/4 cup cacao powder
- 1/4 cup vegan butter, ghee, or oil
- 1/2 teaspoon vanilla
- 3 tbsp maple syrup
Pumpkin Spice Whipped Filling
- 1/2 cup Coco Whip (I used the brand So Delicious, but you can also just use coconut cream from canned coconut milk)
- 1 tsp Pumpkin Pie Spice
- 1 Tbsp Pumpkin Puree
- Maple Syrup, as needed
Instructions:
- Preheat your oven to 350F. Line a cookie sheet with parchment paper.
- Combine all oreo cookie ingredients until a dough forms. Use a cookie scooper to drop spoonfuls onto the cookie sheet. Then, using your palm or the bottom of a glass, flatted the cookies down.
- Bake for 9-12 minutes, or until golden around the edges. Remove from the oven and allow them to cool completely.
- Make the filling by combining all the ingredients together until completely smooth. Taste and adjust the sweetness and spices as necessary. You can't mess the filling up! Make it to your liking!
- Slather some of the filling onto a cookie and sandwich another on top! Enjoy!
