I'm just going to say one word that describes this recipe - ADDICTING. Graham cracker base, covered in a homemade caramel, topped in chocolate. BUT, refined sugar free and super easy to make!
Ingredients
Graham Crackers
- 1 cup almond flour
- 1/3 cup coconut flour
- 1/3 cup tapioca flour
- 2 tsp cinnamon
- 2 tsp vanilla1/8 tsp each nutmeg & ginger
- Pinch of sea salt
- 1/4 tsp baking soda
- 1 tbsp molasses
- 1/3 rounded cup monkfruit or coconut sugar
- 1/3 cup melted vegan butter or ghee/oil
- 3 tbsp plant milk, as needed
Caramel
- 3/4 cup canned coconut cream (mostly the solid part)
- 1/2 cup Monkfruit Sweetener (I use Whole Earth)
- 3 tbsp coconut sugar
- 1 tsp vanilla
- 1/4 tsp sea salt
Chocolate
- 1 1/2 cups chocolate
- 2 tbsp coconut milk (for more of a ganache texture)
Instructions
- Preheat oven to 350F.
- Combine all of the dough ingredients, besides the milk, until well mixed. I really got in there with my hands to make sure everything was combined.
- Add 1 tbsp of milk at a time until the dough is able to form a nice moist ball. You don’t want it too moist, but not dry. Place the dough on parchment paper & roll out into a rectangle, about 1/4 in thick.
- Bake for 10-11 mins or until golden. Let cool.
- While the graham crackers are baking, make the caramel by combining everything, besides the vanilla, in a small saucepan over medium-high heat, whisking very frequently. Allow the mixture to boil for 4-5 minutes until it starts to thicken.
- Reduce the heat to a low simmer and simmer until it reduces to a caramel consistency. Stir in the vanilla. Then pour the caramel over the cooled crust, spreading it out evenly. Pop the cookie sheet in the freezer for 10 minutes to allow the caramel to harden slightly.
- Melt your chocolate and coconut milk together, slowly, until completely smooth and thick. Spread gently over the caramel layer. Place back in the fridge to harden.
- Remove, cut into bars, and enjoy!
