White Chocolate Blueberry Shortbread Bars

These bars are the perfect treat! Lightly sweet, with the fruity filling, and a light drizzle of melted white chocolate. The shortbread crust only requires a handful of ingredients and these are great out of the freezer!
Ingredients
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4cup + 2 tbsp maple syrup
- 1/3 cup coconut or avocado oil (can sub vegan butter or ghee)
- 1 1/2 tsp vanilla
- 1/4 tsp salt
- pinch of cinnamon
- 1 cup jam/jelly of choice
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350F.
- Combine all of the ingredients, besides the jelly and white chocolate, together until your dough forms.
- Press into a lined loaf pan, for thicker bars, or an 8x8 pan for thinner bars. Bake for 12-18 minutes (depending on pan size) or until lightly golden around the edges. Remove and allow to cool completely.
- Once cooled, top the bars with your jelly of choice. Place in the freezer for 20 or so minutes to help them firm up.
- Remove and cut into bars. Melt the white chocolate and drizzle over top. Enjoy!
