White Chocolate Blueberry Shortbread Bars

White Chocolate Blueberry Shortbread Bars

These bars are the perfect treat! Lightly sweet, with the fruity filling, and a light drizzle of melted white chocolate. The shortbread crust only requires a handful of ingredients and these are great out of the freezer!

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4cup + 2 tbsp maple syrup
  • 1/3 cup coconut or avocado oil (can sub vegan butter or ghee)
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • pinch of cinnamon
  • 1 cup jam/jelly of choice
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350F.
  2. Combine all of the ingredients, besides the jelly and white chocolate, together until your dough forms. 
  3. Press into a lined loaf pan, for thicker bars, or an 8x8 pan for thinner bars. Bake for 12-18 minutes (depending on pan size) or until lightly golden around the edges. Remove and allow to cool completely.
  4. Once cooled, top the bars with your jelly of choice. Place in the freezer for 20 or so minutes to help them firm up. 
  5. Remove and cut into bars. Melt the white chocolate and drizzle over top. Enjoy!
