Baklava Cookies

These aren't authentic by any means, but all of my favorite baklava inspired flavors in cookie form! They are absolutely addicting and super easy to throw together!
Ingredients
Cookies
- 1 cup almond flour
- 1/3 cup tapioca flour
- 2 tbsp maple syrup
- 2 tbsp coconut sugar
- 1/4 tsp baking soda
- 1/3 cup vegan butter or coconut oil, or ghee
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp sea salt
filling
- 1/2 cup chopped pistachios/walnuts
- 2 tbsp maple syrup
- 1 tbsp coconut sugar
- 1/2 tsp ground cinnamon
- 1 tsp lemon juice
- 2 tbsp melted cacao butter or coconut oil
Cinnamon Icing
- 1/3 cup monkfruit powdered sugar (or regular)
- 1 tsp cinnamon
- 2 tbsp plant milk
- (Alternatively, you can drizzle over some melted white chocolate!)
Instructions
- Preheat oven to 325F.
- Combine all cookie ingredients together. Roll into balls and place on a lined cookie sheet. Use your thumb to make a small imprint in the center.
- Bake for 12-14 minutes, or until golden around the edges. Remove from the oven. You can carefully use your thumb to re-indent the middle if needed. Let cool.
- While the cookies are baking, make the filling by combining everything in a small saucepan over medium heat. Cook the mixture until it becomes sticky and caramelized. Remove from the heat and let cool.
- Add a spoonful of the nutty mixture to the middle of each cookie.
- Mix together the icing ingredients and Drizzle over the top. Enjoy!
