These aren't authentic by any means, but all of my favorite baklava inspired flavors in cookie form! They are absolutely addicting and super easy to throw together!

Ingredients

Cookies
  • 1 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp maple syrup
  • 2 tbsp coconut sugar
  • 1/4 tsp baking soda
  • 1/3 cup vegan butter or coconut oil, or ghee
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
filling
  • 1/2 cup chopped pistachios/walnuts
  • 2 tbsp maple syrup
  • 1 tbsp coconut sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp lemon juice
  • 2 tbsp melted cacao butter or coconut oil
Cinnamon Icing
  • 1/3 cup monkfruit powdered sugar (or regular)
  • 1 tsp cinnamon
  • 2 tbsp plant milk
  • (Alternatively, you can drizzle over some melted white chocolate!)

Instructions

  1. Preheat oven to 325F.
  2. Combine all cookie ingredients together. Roll into balls and place on a lined cookie sheet. Use your thumb to make a small imprint in the center.
  3. Bake for 12-14 minutes, or until golden around the edges. Remove from the oven. You can carefully use your thumb to re-indent the middle if needed. Let cool.
  4. While the cookies are baking, make the filling by combining everything in a small saucepan over medium heat. Cook the mixture until it becomes sticky and caramelized. Remove from the heat and let cool.
  5. Add a spoonful of the nutty mixture to the middle of each cookie.
  6. Mix together the icing ingredients and Drizzle over the top. Enjoy!
