Caramel Toasted Coconut Brownies
Toasted Coconut Topped Brownies

The coconut chocolate combination will forever be my weakness. These brownies are so fudgy and are topped with a caramel-y coconut topping, then drizzled with chocolate!
Ingredients
Brownies
- 1/2 cup almond flour
- 1/2 tsp baking soda
- 1/3 cup cacao powder
- 2 flax eggs (2 tbsp flax w/ 6 tbsp water or sub real eggs)
- 1/4 tsp sea salt 1/3 cup maple syrup
- 1/3 cup coconut sugar
- 1/4 cup melted coconut oil
- 3/4 cup Chocolate Chips
- 1 tsp vanilla
- 1/3 cup nut butter
Toasted Coconut Topping
- 1/3 cup + 2 tbsp almond butter
- 1 cup toasted coconut
- 1 tbsp melted coconut oil
- 1/3 cup maple syrup
- Pinch of sea salt
- Chocolate Chips for drizzling - I use Hu Kitchen Gems "danishealthyeats" gets you a discount!
Instructions
- Preheat the oven to 350F.
- Melt the chopped chocolate and coconut oil together until smooth.
- Add in the nut butter & remaining wet ingredients. Stir in the dry.
- Pour in pan evenly & bake for 20-22 minutes until just set. Let them cool completely.
- To make the topping, mix everything together really well.
- Spread over the cooked brownies.
- Melt the chocolate & drizzle over the top, then pop in the freezer to firm up!
