The coconut chocolate combination will forever be my weakness. These brownies are so fudgy and are topped with a caramel-y coconut topping, then drizzled with chocolate!

Ingredients

Brownies
  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/3 cup cacao powder
  • 2 flax eggs (2 tbsp flax w/ 6 tbsp water or sub real eggs)
  • 1/4 tsp sea salt 1/3 cup maple syrup
  • 1/3 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 3/4 cup Chocolate Chips
  • 1 tsp vanilla
  • 1/3 cup nut butter
Toasted Coconut Topping
  • 1/3 cup + 2 tbsp almond butter
  • 1 cup toasted coconut
  • 1 tbsp melted coconut oil
  • 1/3 cup maple syrup
  • Pinch of sea salt
  • Chocolate Chips for drizzling - I use Hu Kitchen Gems "danishealthyeats" gets you a discount!

Instructions

  1. Preheat the oven to 350F.
  2. Melt the chopped chocolate and coconut oil together until smooth.
  3. Add in the nut butter & remaining wet ingredients. Stir in the dry.
  4. Pour in pan evenly & bake for 20-22 minutes until just set. Let them cool completely.
  5. To make the topping, mix everything together really well.
  6. Spread over the cooked brownies.
  7. Melt the chocolate & drizzle over the top, then pop in the freezer to firm up!
