Florida Orange Juice Pecan Crunch Cake
Oh boy, do I have a special treat in store for you guys today! I literally could NOT wait to share this super fun cake recipe as soon as I tasted it! Something about the pecan, cinnamon, and Florida Orange Juice combination cannot be beat, and I don’t know why, but it always gives me fancy vibes!
It is National Nutrition Month, so what better way to celebrate than a nutrient packed recipe!? I was ecstatic to partner with Florida Orange Juice on this recipe, as that is where this cake gets its amazing citrus flavor! Florida Orange Juice is 100% OJ, so you won’t find any added sugar here - which you guys know is so important to me! It is chock-full of vitamin C, with one 8-ounce glass containing over 100% of the RDV! NUTS. Vitamin C is essential for skin and bone health, as well as immune function. So be sure to get it in!
Florida Orange Juice also offers a number of other essential vitamins and minerals including:
folate (may help prevent cardiovascular disease)
magnesium & potassium (essential for heart, kidney, and muscle function)
vitaminB6 (helps the body create antibodies to help fight disease)

This recipe is incredibly easy. You make the crumble, make the batter, bake it, and glaze it up! Quick, painless, and a crowd pleaser!

Orange Pecan Crunch Cake

Ingredients
- 1 cup Florida Orange Juice
- 1 cup Spelt Flour
- 1/2 cup Almond Flour
- 1 tbsp Tapioca Starch
- 3/4 cup Granulated Monkfruit Sweetener or granulated sugar of choice
- 3/4 tsp baking soda
- 2 tbsp olive oil
- 1/2 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1 1/2 tsp cinnamon
- Pinch of Sea Salt
- 1/4 cup Chopped Pecans
- 1/2 cup Almond flour
- 1/4 cup Chopped Pecans
- 2 tbsp Melted Coconut Oil
- 1 1/2 tsp Cinnamon
- 2 Tbsp Coconut Sugar
- 1 Tbsp Orange Zest
- 1/2 cup Powdered Monkfruit Sweetener or regular Powdered Sugar
- 5 tbsp Florida Orange Juice
- 1/4 tsp Cinnamon
Instructions
- Preheat oven to 350F.
- Mix together the wet ingredients until smooth. Then add in the dry until the batter forms.
- In a separate bowl, combine the crumble ingredients until the crumble forms.
- Spread the batter in a greased 8x9in cake pan. Sprinkle the crumble over the top of the batter.and bake for 30 - 35 minutes, or until a toothpick inserted comes out clean. Let cool.
- To make the optional glaze, mix together the ingredients, starting with 1 tbsp of Florida Orange Juice at a time, until you reach a glaze consistency. Drizzle over the top and enjoy!
