This berry crisp comes together so quickly and makes the perfect healthier treat!
Ingredients
Berries
- 1 cup fresh or frozen berries
- 1 tablespoon monk fruit sweetener (can sub coconut sugar or maple syrup)
- 1 teaspoon lemon juice
- 2 teaspoons arrowroot flour
- 1/4 tsp vanilla
- Pinch of salt
Crumble
- 1/4 cup almond flour
- 2 tablespoons tapioca flour
- 1/3 cup oats
- 3 tablespoons almond butter
- 3 tablespoons maple syrup
- 1/4 tsp baking powder
Instructions
- Preheat oven to 350F.
- Combine all of the berry filling ingredients together. Once the tapioca flour has absorbed, use a fork to gently mash the berries a bit. Then divide amongst two greased ramekins.
- Make the crumble by combining everything in a bowl, using a fork or your fingers to bring everything together to form a crumbly mixture. Divide it amongst the two ramekins, sprinkling it over top of the berries.
- Bake for 18-20 minutes, until the crumble is toasty, golden, and crips to your liking.
- Remove from the oven and top with your favorite ice cream or coconut whip! Enjoy!
