Strawberry Crunch Banana Bread Bars

Combining two classic flavors, these banana bread bars are so moist, topped with a vanilla frosting, and crunchy freeze-dried strawberry banana sprinkle!
Ingredients
Bars:
- 2 medium, overripe bananas
- 1 1/2 cups almond flour
- 1/4 cup tapioca or arrowroot flour (can sub more almond flour)
- 2/3 cup cashew or almond butter
- 2 tbsp ground flaxseed mixed with 6 tbsp water (can sub 2 eggs)
- 2 tbsp coconut sugar or monk fruit
- 1 tbsp avocado oil (or melted coconut oil)
- 3/4 tsp baking soda
- 1/3 cup diced, fresh, strawberries
- 1 1/2 tsp vanilla + pinch of sea salt
- 1 bag freeze dried strawberries & banana (I bought a small mixed bag)
- Frosting of choice (store-bought or homemade. I used a refined sugar free one, but you could also make my cashew frosting!)
Instructions
- Combine the flax and water and set aside to thicken for 5-10 minutes.
- In a bowl or blender, add the bananas and other wet ingredients. Blend or mix until everything thoroughly combined. Then add in the remaining ingredients. Stir in the diced strawberries.
- Add the batter to an 8x8 pan (lined or greased). Bake for 18-25 minutes, until a toothpick inserted comes out clean. Let cool completely.
- Frost the bars with your desired frosting. Crush the freeze dried fruit until crumbs form, then sprinkle over the frosting. Cut into bars and enjoy!
