Strawberry Crunch Banana Bread Bars

Combining two classic flavors, these banana bread bars are so moist, topped with a vanilla frosting, and crunchy freeze-dried strawberry banana sprinkle!

Ingredients

Bars:
  • 2 medium, overripe bananas
  • 1 1/2 cups almond flour
  • 1/4 cup tapioca or arrowroot flour (can sub more almond flour)
  • 2/3 cup cashew or almond butter
  • 2 tbsp ground flaxseed mixed with 6 tbsp water (can sub 2 eggs)
  • 2 tbsp coconut sugar or monk fruit
  • 1 tbsp avocado oil (or melted coconut oil)
  • 3/4 tsp baking soda
  • 1/3 cup diced, fresh, strawberries
  • 1 1/2 tsp vanilla + pinch of sea salt
  • 1 bag freeze dried strawberries & banana (I bought a small mixed bag)
  • Frosting of choice (store-bought or homemade. I used a refined sugar free one, but you could also make my cashew frosting!)

Instructions

  1. Combine the flax and water and set aside to thicken for 5-10 minutes.
  2. In a bowl or blender, add the bananas and other wet ingredients. Blend or mix until everything thoroughly combined. Then add in the remaining ingredients. Stir in the diced strawberries.
  3. Add the batter to an 8x8 pan (lined or greased). Bake for 18-25 minutes, until a toothpick inserted comes out clean. Let cool completely.
  4. Frost the bars with your desired frosting. Crush the freeze dried fruit until crumbs form, then sprinkle over the frosting. Cut into bars and enjoy!
