Think Twix meets millionaire's bar, but with almond butter! With a shortbread base, almond butter caramel center, and salty chocolate topping, these are absolutely DANGEROUS.. in the best way! Refined sugar-free, vegan, and paleo!
Ingredients
base
- 2 cups almond flour
- 2 tbsp coconut four (or tapioca flour)
- 1/3 cup melted coconut oil or avocado oil
- 1/4 cup maple syrup
- 1 tsp vanilla + pinch of sea salt
Caramel filling
- 1/2 cup almond butter
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- pinch of sea salt (if your nut butter isn't salted)
- 1 tsp maca (optional)
Top
- 1 cup chocolate of choice
- 1 tsp coconut oil (if needed, to thin)
Instructions
- Preheat oven to 350F.
- Combine all the base ingredients until a dough forms. Press into a lined loaf pan. Bake for 12-14 mins, until golden around the edges. Let Cool.
- Make the filling by whisking everything together until smooth. Pour over the base, spreading it around evenly. Pop in the freezer for 30min-1hr until it sets up enough to pour the chocolate over top.
- Melt the chocolate and oil together and pour over the top of the caramel layer, tilting the pan to cover the top. Place back in the freezer for at least 2 hrs, before cutting into bars. Enjoy!
- *Note: Store in an air-tight container in the freezer. Let thaw a few minutes before enjoying!
