Chocolate Orange Cheesecake
I don’t even know where to begin with this post.. because I am THAT obsessed. You know around the holidays, you start seeing those little round chunks of chocolate that resemble oranges? So random, I know. Not sure who thought of that one! But they are SO good. The perfect combination of citrusy sweet. This flavor combination seems to be that of cilantro; you either love it or you hate it. But I PROMISE in cheesecake form, it is to die for. And, it is always nice to have something a little different than all the traditional flavors around! I about die and go to heaven every time I remember I left myself a hidden slice in the freezer!
Brownie Crust:
2/3 cup walnuts
1/3 cup coconut flakes
2 Tbsp honey or maple syrup
Water as needed
Blend all ingredients in food processor until sticky dough forms. Add water as needed if texture is not sticky enough, but you don’t want it to be wet! Once it holds together nicely, press into desired pan and place in freezer to set.
Chocolate Layer:
1 1/2 cups soaked cashews
1/2 cup cacao powder
1/3 cup maple syrup or honey
1/3 cup melted coconut oil
1 1/2 tsp vanilla
Blend all ingredients in blender or processor until completely smooth. Smooth over crust and place back in freezer.
Orange Layer:
1 1/2 cups soaked cashews
1/2 cup melted coconut oil
2 Tbsp coconut butter
1/4 cup maple syrup
1 tsp vanilla
zest & juice from 2 medium oranges
Melt coconut butter & coconut oil together. Add to blender with remaining ingredients & process until completely smooth. Spread over chocolate layer.
Chocolate topping:
Chocolate bar of choice (Theo’s Orange Chocolate bar is INSANE)
2 Tbsp orange juice & 1 Tbsp orange zest
Melt chocolate until smooth. Stir in juice and zest and pour over orange layer. Place in freezer until completely set. And then get it girl, eat that whole thing!
