Elvis Ice Cream Mousse Cakes

Elvis is known for one thing.. Okay, maybe he’s known for a couple of these, like his incredible music, but I like to remember him as the guy who loved a good ol’ peanut butter and banana sandwich. Growing up, this was something my cousins and I would BEG my grandmother for. We looked forward to snack time every day, knowing we’d get a little bit of peanut butter and some sliced banana slapped betweeen two slices of bread. Ahhh man, it’s the little things, right?

As I have grown older, one thing will forever stay the same; my love for this flavor combination. I really, truly, never get sick of it. And to add in some chocolate.. it becomes even more unreal. That is where these treats come into play! A chocolate bottom, a banana peanut butter “nice cream” beneath a rich chocolate avocado mousse, topped with more chocolate, and peanut butter drizzle. These did NOT last long in my house.. (Who am I kidding, because I ate them all). But they will definitely be on repeat! Not to mention how quick and easy they are!

For the top & bottom chocolate layer:

2 Chocolate bars, divided

2 Tbsp coconut oil, divided

For the Banana layer:

1 cup soaked cashews

2 Tbsp melted coconut oil

1 ripe banana

2 Tbsp peanut butter

1/4 cup maple syrup

1 tsp vanilla

Pinch of sea salt

Chocolate avocado mousse:

1 ripe avocado

1/2 cup raw cacao powder

1/2 cup maple syrup

1 1/2 tsp vanilla

Pinch of sea salt

Melt chocolate bar and coconut oil until smooth. Pour in the bottom of greased muffin tins (or pan of choice). Place in freezer until hardened.

Blend all cheesecake ingredients in food processor or blender until completely smooth. If too thick, add a little more melted coconut oil. Divide evenly amongst muffin tins. Complete the same steps with the avocado mousse.

Melt the second chocolate bar and coconut oil until smooth and divide chocolate amongst the muffin tins, just covering the chocolate mousse. Place back in freezer until set. You could drizzle melted peanut butter,,more chocolate, or even sea salt for a little something extra! Enjoy!
