Raw Vegan Snickers Bars

I don’t know how else to start out this post, other than these three words..

RAW. VEGAN. SNICKERS.

Growing up, I was a sucker for candy bars. You name it, I would eat it. I was obsessed. What I didn’t know, was what was inside of those suckers. Full of additives, preservatives. and artificial colorings/flavors they are definitely not the most healthful choice.

Throughout my journey towards living a healthier life, I struggled a lot with sweets. I didn’t want to deprive myself. but not he other end of the spectrum, I wanted to fuel my body with nourishing ingredients/foods. So I started getting creative in the kitchen. One day, while brainstorming foods I wanted to re-create, Snickers bars popped into my head. WHY HAD I NOT MADE THESE YET!? So I got right to it. I’ve made these in a variety of different ways and they are ALWAYS to die for. These are refined sugar-free, refined flour free, have no artificials or preservatives, and instead are full of nourishing ingredients.

The crazy part, now? I would choose one of these over a normal snickers ANY DAY. I actually crave this form of them, rather than the real deal. It goes to show how your tastebuds can change when you begin consuming more Whole Foods. It also goes to show how amazingly tasty healthy foods can be, contrary to some belief. If you’re going to do one thing today, MAKE THESE.

Ingredients:

Bottom Nougat Layer:

1 Tbsp Coconut flour

1/2 cup peanut butter (or sub your fave nut butter)

2 Tbsp lakanto low carb Maple Syrup (DANISHEALTHYEATS gets you a discount here: https://www.lakanto.com/?aff=180 )

Caramel Center:
3/4 cup pitted dates

1/4 tsp sea salt

1 tsp vanilla extract

1 Tbsp melted coconut oil

water as needed

Chocolate layer:

1 chocolate bar

2 tsp coconut oil

Instructions:

  1. Mix all nougat ingredients until smooth. Press into loaf pan and place in freezer to Harden.

  2. In a food processor, blend all caramel ingredients until smooth. Use water as needed to get the texture/consistency perfect.

  3. Spread the caramel layer over the nougat layer. Sprinkle chopped peanuts (or almonds, walnuts, etc) over the caramel.

  4. Melt chocolate of choice with coconut oil until completely smooth. Pour over caramel layer & place back in freezer until set.

  5. I topped mine with sea salt & chopped peanuts! Cut into bars, bites, whatever you desire & Enjoy!
