Granola Butter Nice Cream Bars
I have been allll for everything quick and easy over here, during this busy season. Starting a new personal training job, the holidays, travel, etc., has been taking up more time that I had originally planned for. Baking and being in the kitchen is definitely my “me” time, my time to unwind and be in my own head, and something I thoroughly enjoy, but sometimes, I am just too darn tired to spend hours slaving away in the kitchen on decadent desserts.
So I have been experimenting with super quick, minimal ingredient treats that don’t skimp on flavor! These Chocolate Granola Butter Nice Cream Bars were just that! Painless, tasty, and addicting. Not to mention how versatile they are! Feel free to switch up nut butters, flours, etc. Have fun with it!
Ingredients:
Base:
1 cup almond flour
5 large pitted dates
1 1/2 tbsp melted coconut oil
Filling:
1/4 cup Chocolate Granola Butter (or other nut butter)
1/4 cup Nut milk as needed
1 1/2 large frozen bananas
2 tbsp cacao powder
3 tbsp maple syrup
1 tsp vanilla
Pinch of sea salt
How to:
Combine all base ingredients together in a food processor and process until a dough forms. Press into the bottom of a lined baking dish.
Combine the filling ingredients in a food processor and process until completely smooth and creamy. Start with 1/4 cup milk and gradually increase if needed to reach desired consistency. You want it to be pretty thick though! Pour over the base.
Melt your chocolate and coconut oil together until completely smooth. Pour over the nice cream layer.
Place in the freezer to set. Remove, cut into squares, and enjoy!
