Fruit & Nut Candy Bars

If you’ve been following me for awhile now, you know that I am a SUCKER for fruit and nut mix. You can’t put a bag of it in front of me without it disappearing in .2 seconds. I’d almost consider this skill?

so, with no surprise, I had to take this obsession into account when creating some treats recently. What could be better than a decadent treat including some fruit & nut mix!? Keep scrolling for one of my favorite recipes yet!

Ingredients:

shortbread base:

1 cup almond flour

1/4 cup coconut flour

1 scoop protein (or omit)

1/4 cup medjool dates (more as needed to form dough)

pinch of sea salt

1/2 tsp vanilla

Caramel fruit & nut filling:

1/2 cup nut butter of choice

1/3 cup maple syrup

pinch of sea salt & vanilla

mix ins: nuts & seeds, cacao nibs, coconut flakes, dried fruit, cinnamon & spices, etc.

topping:

1 1/2 chocolate bars of choice

2 tbsp coconut oil

How to:

  1. Combine all shortbread ingredients in a food processor and process until a dough forms.

  2. press into a lined load tin and set aside.

  3. To form the center, combine all ingredients besides mix-ins until smooth. Then, stir in whatever you feel like adding. Spread evenly over shortbread crust.

  4. Place in the freezer to set. Once hardened, remove & cut into slices, bites, or whatever size you desire.

  5. melt the chocolate & coconut oil together until smooth. Dip each bar/bite until it’s fully covered & place on a baking sheet lined with parchment paper. Continue with each piece. Then, place back in the freezer until chocolate has set.
