Almond Butter Crunch Truffles
These aren’t just your regular truffles.. they are truffles from the heavens above. So good in fact, they have been proven to cheer up even the most sad of friends.
This week was extremely rough for my boyfriend and I. We lost one of our best friends to cancer at 25. The same rare cancer my boyfriend beat. So the pain has been unimaginable. I knew I had to do evehrhing in my power to put a smile on Thomas’s face through these tough times and I know these are his favorite. So he was excited to come home to this surprise! May seem like a tiny gesture, but it’s the little things!
Back to these bad boys.. they’re full of the most decadent vanilla-almond buttery center, chopped walnuts & peanuts, the best crunch factor from sprouted rice cereal. You could totally skip the cereal to make these paleo & add more chopped nuts. Then, of course, they’re dunked in chocolate & topped with sea salt. Because there is no better combination. Enjoy! ingredients:
1 cup RX vanilla almond butter (any nut butter will work! I just LOVE this flavor)
1 tsp vanilla
1/3 cup coconut oil, melted
1/4-1/2 coconut flour
1 1/2 cups rice cereal
1/2 cup chopped wanits
1/2 cup chopped peanuts
sweetener of choice (I used liquid stevia here, but you can add maple syrup or honey or any other sweetener of choice. I would recommend adding a little at a time & tasting in between until desired sweetness)
1/2 tsp sea salt
Chocolate bar (I used eating evolved)
How to:
Melt together nut butter and coconut oil until smooth. Add in remaining ingredients, besides the cereal. Once combined thoroughly, gently stir in cereal. Roll into balls and place in the freezer for at least 30 minutes or until hardened.
Melt chocolate of choice with 1 Tbsp of coconut oil until smooth. Dip each ball into the chocolate mixture & set on a parchment lined sheet or plate. Place back in freezer until set. I topped mine with sea salt, because.. what is better!?
